Oat and Quinoa Flour Pancakes
Ingredients
- 1 tbsp apple cider vinegar
- 1 cup soy milk
- 1 tbsp maple syrup
- 1 tsp baking powder
- 1 1/2 cups of oat/quinoa flour blend
- 1 grated apple (I used macintosh)
- 1/2 tsp cinnamon
Preparation
Mix apple cider vinegar and soy milk together to curdle and create a buttermilk substitute.
In a separate bowl, combine the dry ingredients: oat/quinoa flour blend, baking powder, and cinnamon
Add maple syrup and grated apple to the wet mixture
Combine the wet and dry ingredients until just mixed, being careful not to overmix
Heat a griddle or non-stick pan over medium heat and cook the batter in pancakes until golden brown on both sides
