Favorite Harissa Scrambled Tofu Breakfast

Ingredients

  • oil
  • 3 red onions
  • 2.5 tablespoons harissa
  • 1/2 silk tofu
  • 1/2 tofu
  • slices of your favorite bread
  • Salt
  • pepper

Optional additions

  • Handful mushrooms
  • Cucumber slices
  • radish slices

Preparation

  1. heat oil in a pan

  2. slice up onion in rings

  3. caramelize in the oil until soft

  4. if you want to add mushrooms, slice them and add them to the pan and glaze a couple more minutes

  5. add the harissa

  6. add silk tofu, salt and pepper

  7. smash up the tofu and mix all together

  8. roast for a couple more minutes

  9. serve on your bread (preferably crunchy baked one)

  10. feel free to add cucumber or radish slices
