Favorite Harissa Scrambled Tofu Breakfast
Ingredients
- oil
- 3 red onions
- 2.5 tablespoons harissa
- 1/2 silk tofu
- 1/2 tofu
- slices of your favorite bread
- Salt
- pepper
Optional additions
- Handful mushrooms
- Cucumber slices
- radish slices
Preparation
heat oil in a pan
slice up onion in rings
caramelize in the oil until soft
if you want to add mushrooms, slice them and add them to the pan and glaze a couple more minutes
add the harissa
add silk tofu, salt and pepper
smash up the tofu and mix all together
roast for a couple more minutes
serve on your bread (preferably crunchy baked one)
feel free to add cucumber or radish slices
