Vegan Aquafaba Whipped Foam
Ingredients
- 100 ml chickpea water
- 1/2 teaspoon lemon juice
- 2 tablespoons sugar
Preparation
Sieve the chickpeas and keep the water; use the chickpeas for something else.
Mix in lemon juice and sugar.
Blend all until it gets the preferred consistency. For thick aquafaba, this can take a while, so if you have a standing mixer, use it.
Notes
Aquafaba is a vegan substitute for egg whites made from chickpea water.
It can be used in cocktails like whisky sour or for making desserts.
