Vegan Aquafaba Whipped Foam

Ingredients

  • 100 ml chickpea water
  • 1/2 teaspoon lemon juice
  • 2 tablespoons sugar

Preparation

  1. Sieve the chickpeas and keep the water; use the chickpeas for something else.

  2. Mix in lemon juice and sugar.

  3. Blend all until it gets the preferred consistency. For thick aquafaba, this can take a while, so if you have a standing mixer, use it.

Notes

  1. Aquafaba is a vegan substitute for egg whites made from chickpea water.

  2. It can be used in cocktails like whisky sour or for making desserts.
