90-Second Single-Serve Banana Bread
Ingredients
- 60g (1/2 cup) oats, blended
- 5 tbsp any milk
- 40g over ripe banana, mashed
- 1/3 tsp baking powder
- 1/3 tsp baking soda
- 1 tsp margarine
- 1 tbsp sweetener
- Squeeze lemon juice
- Pinch cinnamon
Preparation
Peel and chop half a banana (40g) and mash with a fork in a cup. To make mashing easier you can pop it in the microwave for 30 seconds to soften.
Then add all the ingredients except the oats into the cup.
Mix it all together with a spoon.
Blitz the oats to a flour consistency using a hand blender or food processor then add it to the cup.
Give it all a stir and leave to rest for a couple of minutes.
Then pop the cup in the microwave on high for 90 seconds.
Once cooked use a sharp knife to edge it out of the cup and turn out onto a plate.
Eat it as it is, or slice and spread with butter.
Tips
If you cant eat gluten, use gluten free oats and baking powder.
To make it vegan use a plant based milk and check the margarine contains no dairy.
The riper the banana the better as it’s naturally sweet so you won’t have to add much sweetener/sugar.
