Baked Pear Oats with Coconut Cream

Ingredients

  • 100g oats
  • 100g pear, chopped, peeled & cooked
  • 100g any yogurt (e.g., soy yogurt)
  • 1 tbsp dried fruit
  • 1 tbsp sweetener
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 3 tbsp boiling water

Preparation

  1. Soak oats in boiling water in a bowl for 2 minutes.

  2. Mix in all of the other ingredients, including the cooked pear.

  3. Pour the mixture into a shallow oven-proof dish lined with baking parchment/paper and bake in the oven for 30 minutes at 180°C (350°F) or gas mark 4.

  4. Serve hot or cold with toppings like maple syrup, yogurt, cream, custard, or more yogurt.
