Carrot Cake Baked Oatmeal
Ingredients
- 100g oats
- 2 bananas
- Optional: some dates for sweetness
- 250ml liquid
- 1.5 tbsp chia seeds or flaxseeds
- 1 tbsp peanut butter
- 1 tsp Cinnamon
- 1/2 tsp Cardamom
- 1/4 tsp Ginger powder
- Vanilla
- 2 small carrots, grated
- Raisins
- Almonds
Preparation
Preheat the oven to 185°C (365°F).
In a mixing bowl, combine oats, bananas, dates (if using), liquid, chia seeds or flaxseeds, peanut butter, cinnamon, cardamom, ginger powder, and vanilla.
Blend the mixture until smooth and the oats turn into a flour-like consistency.
Fold in the grated carrots, a handful of raisins, and chopped almonds, reserving some for topping.
Grease two ramekins and pour the oat mixture evenly into them.
Bake in the preheated oven for 25-30 minutes or until the top is golden and the oatmeal is set.
While the oatmeal is baking, prepare the cream cheese topping. Mix vegan cream cheese, vanilla, sweetener, and a handful of raisins, crushed almonds, and grated carrots.
Once the baked oatmeal is done, remove from the oven and let it cool slightly.
Top the oatmeal with the cream cheese mixture and the reserved raisins, almonds, and grated carrots.
Serve warm and enjoy!
