Carrot Cake Baked Oatmeal
Ingredients
- 1 cup Carrots, shredded
- 1/4 cup Dates, pitted and chopped
- 1/2 cup Apple purée
- 1 cup Macadamia milk
- 1 Flax egg
- 2 cups Oats
- 1/4 cup Carrot powder
- 1 tsp Baking powder
- 1/4 cup Maple syrup
- 2 tsp Cinnamon
- 1 tsp Powdered cardamom
- 1/2 tsp Powdered ginger
- 1/2 tsp Nutmeg
- 1/2 tsp Allspice
- 1 pinch of Salt
- 1/4 cup Shredded Coconut
- 1/4 cup Sunflower seeds
- 1/2 cup Pecans or sliced Almonds
- 2 cups Water
Preparation
Pour boiling water over the oats and let them sit for 5 minutes.
Mix in the remaining ingredients.
Pour the mixture into a lined baking dish.
Bake at 190°C for 50 to 60 minutes.
Allow it to cool completely before cutting.
