Carrot Cake Baked Oatmeal

Ingredients

  • 1 cup Carrots, shredded
  • 1/4 cup Dates, pitted and chopped
  • 1/2 cup Apple purée
  • 1 cup Macadamia milk
  • 1 Flax egg
  • 2 cups Oats
  • 1/4 cup Carrot powder
  • 1 tsp Baking powder
  • 1/4 cup Maple syrup
  • 2 tsp Cinnamon
  • 1 tsp Powdered cardamom
  • 1/2 tsp Powdered ginger
  • 1/2 tsp Nutmeg
  • 1/2 tsp Allspice
  • 1 pinch of Salt
  • 1/4 cup Shredded Coconut
  • 1/4 cup Sunflower seeds
  • 1/2 cup Pecans or sliced Almonds
  • 2 cups Water

Preparation

  1. Pour boiling water over the oats and let them sit for 5 minutes.

  2. Mix in the remaining ingredients.

  3. Pour the mixture into a lined baking dish.

  4. Bake at 190°C for 50 to 60 minutes.

  5. Allow it to cool completely before cutting.

  6. Enjoy!
