Fluffy Blueberry Waffles
Ingredients
- 3/4 cup Just Egg or 4 Flax Eggs
- 3 cups Plant Milk
- 10 Tbsp Vegan Butter, melted
- 3 tsp Vanilla
- 3 Tbsp Apple Cider Vinegar
- 3 cups Flour
- 2 1/2 Tbsp Baking Powder
- 1 tsp Salt
- 1/4 tsp Nutmeg
- 1/4 tsp Cinnamon
- 6 Tbsp Sugar
- 2 cups Frozen Blueberries, plus 1/3 cup for adding to Waffles
- 1 Tbsp Sugar (for blueberry compote)
- 2 Tbsp Water (for blueberry compote)
- 1 tsp Lemon Juice (for blueberry compote)
- Optional: 1/4 tsp Agar Agar (to thicken blueberry compote)
- Vegan Butter & Maple Syrup (for serving)
Preparation
Add all of the wet ingredients together and let sit while you prepare the dry.
In a large bowl, combine the dry ingredients and mix well.
Combine the wet and dry ingredients, mixing until well combined. A few small lumps are okay. Let the batter rest for 10-15 minutes.
While the waffle iron is heating, make the Blueberry Compote by adding all of the compote ingredients except the Agar to a small pot on medium-high heat. Once boiling, add in the Agar and continue to cook down until thick. Keep warm until serving.
Pour about 2 ladles of batter onto the hot waffle iron and add a few blueberries. Cook according to the waffle iron's specifications (approximately 5-8 minutes).
Serve the waffles with vegan butter, maple syrup, and a generous serving of blueberry compote.
