Peanut Butter and Jam Baked Oatmeal

Ingredients

  • 100g oats
  • 1 ripe banana
  • 2 tbsp cacao powder
  • 1/2 tsp baking powder
  • 2 tsp chia seeds
  • 2-3 tbsp jam
  • 2-3 tbsp peanut butter
  • 280ml liquid (e.g., plant-based milk)
  • Optional sweetener (dates, syrup, stevia, banana, or apple sauce)

Preparation

  1. In a blender, combine rolled oats, ripe banana, cacao powder, 1 tbsp peanut butter, liquid, and optional sweetener. Blend until smooth, about 30 seconds.

  2. Add baking powder and chia seeds to the blender mixture. Stir well and let sit for 10 minutes.

  3. Preheat the oven to 190°C (375°F).

  4. Grease 2 ramekins.

  5. Pour the oat mixture into the ramekins, filling them about 3/4 of the way.

  6. Add a spoonful of jam and peanut butter in the middle of each ramekin.

  7. Pour more oat mixture over the fillings and smooth the top.

  8. Repeat the filling and layering process for the second ramekin.

  9. Bake in the preheated oven for about 25 minutes, checking between 23-28 minutes. The oatmeal is done when a knife inserted comes out "dry" when poked (not in the center).

  10. Allow the baked oatmeal to cool before serving.
