Easy Gluten-Free Chocolate Brookies

Ingredients

Brownie

  • 1 box gluten-free brownie mix (King Arthur Flour)
  • 2 eggs
  • 2 tablespoons water
  • 1 stick butter
  • 1/2 to 1 cup milk chocolate chips (Ghirardelli)

Cookie dough

  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 1/2 cup butter
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 1/4 cups gluten-free measure for measure flour (King Arthur Flour)
  • 1/2 cup chocolate chips (Ghirardelli)

Toppings

  • Additional milk chocolate chips for topping

Preparation

  1. Prepare the brownie mixture by combining the brownie mix, eggs, water, butter, and chocolate chips.

  2. Grease an 8x8 inch square pan and spread the brownie mixture in it.

  3. Preheat the oven to 350 degrees Fahrenheit.

  4. For the cookie dough, beat together brown sugar, granulated sugar, and butter for 3 minutes or until fluffy.

  5. Mix in vanilla extract, egg, baking powder, baking soda, and gluten-free flour.

  6. Stir in chocolate chips to the cookie dough.

  7. Place spoonfuls of the cookie dough over the brownie layer; it does not need to fully cover.

  8. Add additional chocolate chips on top.

  9. Bake for 50 to 60 minutes.

  10. Remove from the oven and let cool slightly before serving.
