Mini Fruit Pizzas

Ingredients

  • 2 cups almond flour
  • 1/4 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 tsp. baking powder
  • 1/4 cup melted butter
  • 1/4 cup Greek yogurt
  • 1 egg

Frosting

  • powdered sugar
  • water
  • dash of vanilla extract

Toppings

  • fresh fruit

Preparation

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients.

  3. Coat your countertop with a little extra all-purpose flour and roll out the dough.

  4. Use a mini cookie cutter to cut out cookies.

  5. Bake for 10-12 minutes, then transfer to a cooling rack and let cool.

  6. Prepare the frosting by mixing powdered sugar, water, and a dash of vanilla extract.

  7. Add the frosting and fresh fruit as toppings and serve.

Notes

  1. Can substitute with gluten-free all-purpose flour.

  2. Can use cane sugar instead of granulated sugar.
