Mini Fruit Pizzas
Ingredients
- 2 cups almond flour
- 1/4 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 tsp. baking powder
- 1/4 cup melted butter
- 1/4 cup Greek yogurt
- 1 egg
Frosting
- powdered sugar
- water
- dash of vanilla extract
Toppings
- fresh fruit
Preparation
Preheat oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients.
Coat your countertop with a little extra all-purpose flour and roll out the dough.
Use a mini cookie cutter to cut out cookies.
Bake for 10-12 minutes, then transfer to a cooling rack and let cool.
Prepare the frosting by mixing powdered sugar, water, and a dash of vanilla extract.
Add the frosting and fresh fruit as toppings and serve.
Notes
Can substitute with gluten-free all-purpose flour.
Can use cane sugar instead of granulated sugar.
