Fresh Rice Paper Rolls with Peanut Butter Sauce π±

Preparation
Prepare the Rice Paper: Fill a large bowl with warm water. Dip one sheet of rice paper into the water until it softens, about 10-15 seconds. Remove and place on a clean surface.
Layer the Ingredients: On the softened rice paper, arrange a small portion of rice noodles, cucumber, carrot, bell pepper, avocado, mango, and tofu in the center. Add some salad greens and red cabbage for extra flavor and crunch.
Roll the Rice Paper: Fold the sides of the rice paper over the filling. Begin rolling from the bottom, tucking the filling in as you go. Roll tightly, similar to a burrito. Repeat with the remaining ingredients.
Prepare the Peanut Butter Sauce: In a bowl, mix together peanut butter, Japanese soy sauce, syrup (or fresh dates), minced garlic clove, ginger, a pinch of chili, lime juice, oat cream, and water as needed. Mix until the sauce reaches your desired consistency.
