Healthy No-Bake Coconut Almond Raffaello Candy Balls
Ingredients
- 2 tablespoons (level) coconut oil
- 4 tablespoons coconut butter
- 1 tablespoon cashew butter
- 4 tablespoons maple syrup
- 1 pinch bourbon vanilla extract
- 1 drop rum flavor
- 3-4 tablespoons coconut flakes for rolling
- 12 whole almonds
Preparation
Melt coconut oil, coconut butter, and cashew butter in a small bowl over a water bath
Stir briefly, then remove from heat
Add maple syrup, vanilla extract, and rum flavor
Refrigerate the bowl for about 1-2 hours or until the mixture firms up
Place coconut flakes in a shallow bowl
Take about one teaspoon of the firm mixture from the bowl
Knead very briefly with your fingers until the mixture becomes pliable
Press a whole almond into the mixture
Roll the mixture into a ball
Roll each ball directly in the coconut flakes
Place the balls on a plate
Continue until all the Raffaello mixture is used
Chill the healthy Raffaello until serving
