Healthy No-Bake Coconut Almond Raffaello Candy Balls

Ingredients

  • 2 tablespoons (level) coconut oil
  • 4 tablespoons coconut butter
  • 1 tablespoon cashew butter
  • 4 tablespoons maple syrup
  • 1 pinch bourbon vanilla extract
  • 1 drop rum flavor
  • 3-4 tablespoons coconut flakes for rolling
  • 12 whole almonds

Preparation

  1. Melt coconut oil, coconut butter, and cashew butter in a small bowl over a water bath

  2. Stir briefly, then remove from heat

  3. Add maple syrup, vanilla extract, and rum flavor

  4. Refrigerate the bowl for about 1-2 hours or until the mixture firms up

  5. Place coconut flakes in a shallow bowl

  6. Take about one teaspoon of the firm mixture from the bowl

  7. Knead very briefly with your fingers until the mixture becomes pliable

  8. Press a whole almond into the mixture

  9. Roll the mixture into a ball

  10. Roll each ball directly in the coconut flakes

  11. Place the balls on a plate

  12. Continue until all the Raffaello mixture is used

  13. Chill the healthy Raffaello until serving

Notes

  1. Active preparation time is 15 minutes

  2. Chill time required: 1-2 hours

  3. Makes 12 pieces
