Homemade Coconut Yogurt and Protein Cookies

Ingredients

Coconut yogurt

  • 1 whole coconut (preferably young coconut)
  • 2 probiotic capsules

Protein cookies

  • 1 scoop protein powder (vanilla)
  • 3 Brazil nuts
  • handful pumpkin seeds
  • 1 tablespoon coconut butter
  • 1 tablespoon cacao butter
  • 1 tablespoon almond butter
  • 1 teaspoon flax seeds
  • 1 teaspoon cacao nibs

Preparation

  1. Carefully cut open a circle in the top of the coconut and pour out the water into a jar.

  2. Scoop out the coconut meat into a blender, add about 1/4 cup of the coconut water (or more for thinner consistency), and add the probiotic powder.

  3. Blend until mixed and creamy. It will thicken in the refrigerator.

Cookie making

  1. Blend 3 Brazil nuts and a handful of pumpkin seeds to powder.

  2. Mix all ingredients together.

  3. Freeze the mixture in muffin trays.
