Homemade Coconut Yogurt and Protein Cookies
Ingredients
Coconut yogurt
- 1 whole coconut (preferably young coconut)
- 2 probiotic capsules
Protein cookies
- 1 scoop protein powder (vanilla)
- 3 Brazil nuts
- handful pumpkin seeds
- 1 tablespoon coconut butter
- 1 tablespoon cacao butter
- 1 tablespoon almond butter
- 1 teaspoon flax seeds
- 1 teaspoon cacao nibs
Preparation
Carefully cut open a circle in the top of the coconut and pour out the water into a jar.
Scoop out the coconut meat into a blender, add about 1/4 cup of the coconut water (or more for thinner consistency), and add the probiotic powder.
Blend until mixed and creamy. It will thicken in the refrigerator.
Cookie making
Blend 3 Brazil nuts and a handful of pumpkin seeds to powder.
Mix all ingredients together.
Freeze the mixture in muffin trays.
