Persian Herb Egg Bites

Ingredients

  • 200 grams fresh herbs (parsley, coriander and dill)
  • 2 spring onions
  • 50 grams spinach
  • 4 eggs
  • 2 tablespoons dried dill
  • 1 tablespoon turmeric
  • 2 tablespoons dried barberries
  • 30 grams walnuts

Preparation

  1. Finely chop all the fresh herbs and spring onion or use a food processor

  2. Soak the barberries in water for 5 minutes

  3. Chop the walnuts

  4. Break the eggs and mix everything together

  5. Heat oil in the pan and bake each side for 3-5 minutes

  6. Serve with naan, yoghurt-mint and extra veggies

Notes

  1. This is a perfect no-waste recipe to use leftover fresh herbs
