Persian Herb Egg Bites
Ingredients
- 200 grams fresh herbs (parsley, coriander and dill)
- 2 spring onions
- 50 grams spinach
- 4 eggs
- 2 tablespoons dried dill
- 1 tablespoon turmeric
- 2 tablespoons dried barberries
- 30 grams walnuts
Preparation
Finely chop all the fresh herbs and spring onion or use a food processor
Soak the barberries in water for 5 minutes
Chop the walnuts
Break the eggs and mix everything together
Heat oil in the pan and bake each side for 3-5 minutes
Serve with naan, yoghurt-mint and extra veggies
