Vegan Jerk Spiced Lentils with Lime
Ingredients
Jerk spice blend
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp smoked paprika
- 1/4 tsp cayenne pepper
- 2 tsp dry thyme
- 2 tsp dry parsley
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp allspice
- 1/2 tsp red pepper flakes
- 1/4 tsp salt
- 1/4 tsp pepper
Lentils
- 1 cup dry lentils (I used black lentils)
- 1/2 a red onion, diced
- 1 red bell pepper, diced
- 1 inch ginger, minced
- 5 cloves garlic, minced
- 1 15oz can of diced tomatoes
- 1 1/2 tbsp jerk seasoning
- 2 tsp brown mustard
- 2 tsp maple syrup
- 3 cups mushroom or vegetable broth
- Juice of 1/2 a lime
- Zest of one lime
Preparation
Jerk spice blend
Combine spices in a jar and mix well before using.
Lentils
In a medium pot add the onion and sauté until softened
Add in ginger, garlic and bell pepper and sauté until fragrant
Add in lentils, tomatoes, jerk seasoning, mustard and maple syrup
Stir to combine and then add broth
Bring mixture to a boil and reduce to a simmer
Cover lentils and allow to cook for 25 minutes or until most of liquid is absorbed by lentils
Add in lime zest and lime juice, stir and remove from heat to serve
