Vegan Nourish Bowl with Chickpea Burgers

Ingredients

Burger

  • 1 1/2 cups chickpeas
  • 1 cup butternut squash, roasted or sauteed
  • 1 cup cauliflower florets, roasted or sauteed
  • 1/2 cup cashews (or sub any nuts/seeds of choice)
  • 1 small jalapeno (optional)
  • 1/4 cup parsley (or sub cilantro)
  • 2 tbsp lemon juice
  • 1 flax egg (1 tbsp flaxmeal + 3 tbsp water)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 -1 cup breadcrumbs
  • 1 tbsp oil to cook

Bowl components

  • Broccoli (for blistering with salt and pepper)
  • Avocado (topped with red pepper flakes)
  • Cucumber (for rolls, topped with lemon juice and sesame seeds)
  • Shelled edamame
  • Heart of palm (for rice preparation)
  • Parsley (for topping)
  • Scallions (for topping)

Preparation

Burger

  1. Preheat oven to 425°F and line a sheet pan with parchment paper

  2. Combine all the ingredients together EXCEPT the breadcrumbs and oil in a high speed food processor and pulse till well incorporated, but still a little coarse

  3. Transfer to a bowl and gradually add in breadcrumbs and stir. Start with 1/2 cup and only add more if mixture is too wet to shape

  4. Roll mixture into balls then flatten to make the burgers. Place on the sheet pan, drizzle with oil then bake 15 mins, flip and bake another 15 mins or until golden and crispy on both sides. Enjoy

Bowl assembly

  1. Blister broccoli by sautéing or roasting with salt and pepper until edges char

  2. Slice avocado and sprinkle with red pepper flakes

  3. Prepare cucumber rolls by slicing cucumber, rolling if desired, and topping with lemon juice and white and black sesame seeds

  4. If needed, lightly heat shelled edamame

  5. Prepare heart of palm rice by grating or processing heart of palm to resemble rice texture

  6. Assemble all components in a bowl, including the cooked burgers, and top with fresh parsley and scallions

Tips

  1. This nourish bowl is customizable; adjust quantities of bowl components based on preference for a balanced, healthy meal

  2. The burger mixture can be made ahead and stored in the fridge for up to 2 days before baking
