Green Sambal with Anchovies and Petai
Ingredients
- 100g anchovies
- 100g petai beans
- 4 kaffir lime leaves
- a little stock powder
Blended spices
- 10 shallots
- 8 green chilies
- 10 bird's eye chilies
Preparation
Soak and wash the anchovies, then fry until dry and remove.
Sauté the spices and kaffir lime leaves until fragrant, add the stock powder, then add the petai and cook until done. After that, add the anchovies, stir well, adjust the taste, remove from heat and serve.
Tips
Choose large, old petai beans for a sweet and crunchy texture; frying releases a delicious aroma that stimulates appetite.
