Grilled Grouper with Rica Spice
Ingredients
- 2 whole grouper fish
- Oil as needed
- Salt
- Lime juice
Spice mix
- 2 cloves garlic
- 1/2 inch ginger
- 25 bird's eye chilies
- 15 green bird's eye chilies
- Salt
- Stock powder
Preparation
Clean the fish, score it, rub with salt and lime juice, and let it sit for 15 minutes.
Mix the ground spices with oil.
Coat the fish with the spice mixture.
Grill until cooked, basting occasionally with the spice mixture.
