Grilled Grouper with Colo-Colo Sauce
Ingredients
- 2 medium-sized grouper fish (or substitute with snapper, tuna, barracuda, etc.)
- Lime juice (for marination and sauce)
- Salt to taste
- 2 green tomatoes
- 6 red bird's eye chilies
- 3 red shallots
Preparation
Marinate the fish with lime juice and salt, let it sit for at least 30 minutes or up to 3 hours in the refrigerator.
Grill the fish until fully cooked, using a non-stick pan or over charcoal.
Prepare the colo-colo sauce by slicing green tomatoes, red bird's eye chilies, and red shallots, then add lime juice and mix well.
Pour the sauce over the grilled fish and serve warm.
