Mujadara Lentil and Rice Dish
Ingredients
- 2 cups yellow lentils
- 2 cups short-grain rice
- 4 large coarsely chopped onions
- 1 cup olive oil
- 2 tablespoons salt
- 2 teaspoons ground cumin
- 1/2 teaspoon black pepper
- 1 teaspoon ground coriander
- 2 tablespoons sumac
Preparation
In a wide pot, heat olive oil well, then add onion and stir until golden. Set some onion aside for garnish.
To the remaining onion, add rice and lentils, stir to toast slightly, then add cumin, coriander, and salt, and stir to infuse flavors.
Add 6 cups of water, stir, bring to a boil, then reduce heat, cover, and cook on low until rice and lentils are done and water is absorbed.
Place the mixture in a serving dish, top with the fried onion and sumac, and serve warm or at room temperature.
Tips
For more flavor, mix some chopped onion with sumac and rub well, then sprinkle over the dish.
