Pistachio Ghriba Cookies
Ingredients
- 3 cups flour
- 1 cup ghee
- 1/2 cup powdered sugar
- 2 tablespoons orange blossom water
- 1/2 cup pistachios
Preparation
Preheat the oven to 150°C and prepare shallow-edged trays
In a mixer bowl, place the flour and ghee, attach the mixing beater, and mix on low speed until the ingredients are combined
Add the sugar and continue mixing
Add the orange blossom water gradually, and mix until a cohesive and soft dough forms
Place the dough in a bowl, take a small piece, roll it between your palms into a pencil shape, then join the ends to form a ring
Place the ghriba on the baking sheet, leaving space between each piece
Place half a pistachio nut on the edge of the ghriba and press lightly to secure it
Bake the ghriba for 8 minutes or until the bottom is light golden
Allow the ghriba to cool completely in the trays, then transfer to a serving dish
