Traditional Arabic Starch Cookies

Ingredients

  • 2 cups starch
  • 1 teaspoon baking powder
  • 1 cup powdered sugar
  • 3 large egg whites
  • 1 teaspoon vanilla extract
  • 1/4 cup softened butter
  • 1/4 cup flour

Decoration

  • melted chocolate
  • finely ground pistachios

Preparation

  1. Prepare shallow-rimmed baking sheets and preheat the oven to 180°C.

  2. Sift the starch, baking powder, and flour, and set aside.

  3. In a mixer bowl, place the sugar, egg whites, vanilla, and butter; attach the whisk attachment and beat until the mixture is fluffy.

  4. Remove the whisk and attach the paddle attachment, add the flour and starch mixture, and mix gently until combined.

  5. Take a small amount of dough between your fingertips and shape into small balls.

  6. Place the balls on the baking sheet with space between each piece.

  7. Bake the cookies for 10 minutes; you will notice some cracks on the surface, which is characteristic due to the starch, then let them cool completely.

  8. Decorate the cookies with chocolate and pistachios and serve.
