Turkish Minced Meat Pide

Ingredients

  • 1 cup warm water
  • 1 cup warm milk
  • 1/4 cup vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1.5 teaspoons yeast
  • Flour as needed, approximately 5 cups to achieve earlobe consistency

Filling

  • 500 grams ground meat
  • 2 tomatoes
  • 1 onion
  • 2-3 cloves garlic
  • 4-5 hot peppers
  • Half a bell pepper
  • 1/4 cup olive oil
  • Salt
  • Black pepper
  • Red pepper flakes
  • 1 teaspoon tomato paste (optional)

Preparation

  1. In a mixing bowl, combine milk, water, oil, yeast, sugar, and salt; stir to mix.

  2. Gradually add flour and knead until the dough is smooth and elastic, about 5 minutes.

  3. Cover the dough and let it rise for 40-50 minutes.

  4. Meanwhile, finely chop all filling ingredients except the meat, then mix everything together.

  5. Divide the dough into 8 pieces and roll each into a long oval shape.

  6. Spread the filling over the dough, pressing lightly to distribute.

  7. Shape the edges of the pide as desired.

  8. Place on a baking sheet and brush the edges with egg yolk.

  9. Bake in a preheated 190°C oven until golden brown.
