Baked Adobo Cauliflower Tacos

Ingredients

  • Almond flour tortillas
  • Hummus
  • Shredded purple cabbage
  • Cauliflower
  • Sriracha
  • Micro greens
  • Olive oil for drizzling
  • 1-2 teaspoons adobo seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • Pepper to taste

Preparation

  1. Preheat the oven to 425°F.

  2. Wash and chop the cauliflower.

  3. Spread the cauliflower on a baking pan lined with parchment paper and drizzle with olive oil.

  4. Season with 1-2 teaspoons adobo seasoning, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon smoked paprika, salt and pepper to taste.

  5. Bake at 425°F for 20-25 minutes until golden brown.

  6. Assemble the tacos with desired toppings.
