Summer Frittata with Potatoes and Courgette

Ingredients

  • 1 tsp olive oil
  • 2 medium potatoes in small dice
  • 1 large courgette in small chunks
  • mixed herbs (fresh or dried)
  • 4tbsp Greek yoghurt
  • 6 eggs

Preparation

  1. Sauté the potato for 5 mins.

  2. Add the courgette and cook for a few minutes.

  3. Beat the eggs with 4 tbsp Greek yoghurt and pepper.

  4. Pour over the potato and veg, covering it.

  5. Cook on a medium heat until the top starts to set then place under the grill to finish.

Tips

  1. This meal can be eaten hot or cold, making it perfect for a cold meal or for making extra for lunches.

  2. Use whatever veggies you have available to customize the recipe.
