Summer Frittata with Potatoes and Courgette
Ingredients
- 1 tsp olive oil
- 2 medium potatoes in small dice
- 1 large courgette in small chunks
- mixed herbs (fresh or dried)
- 4tbsp Greek yoghurt
- 6 eggs
Preparation
Sauté the potato for 5 mins.
Add the courgette and cook for a few minutes.
Beat the eggs with 4 tbsp Greek yoghurt and pepper.
Pour over the potato and veg, covering it.
Cook on a medium heat until the top starts to set then place under the grill to finish.
Tips
This meal can be eaten hot or cold, making it perfect for a cold meal or for making extra for lunches.
