Nutrient-Packed Carrot and Egg Brunch
Ingredients
- 1 carrot
- 1/2 red pepper
- 3 olives
- 1 clove garlic
- splash of olive oil
- handful of baby spinach
- 1 egg
Preparation
Roughly blitz together the carrot, red pepper, olives, and garlic in a mini chopper.
Lightly sauté the mixture with a splash of olive oil.
Add a handful of baby spinach leaves.
Crack an egg over the top and cook until done
