Nutrient-Packed Carrot and Egg Brunch

Ingredients

  • 1 carrot
  • 1/2 red pepper
  • 3 olives
  • 1 clove garlic
  • splash of olive oil
  • handful of baby spinach
  • 1 egg

Preparation

  1. Roughly blitz together the carrot, red pepper, olives, and garlic in a mini chopper.

  2. Lightly sauté the mixture with a splash of olive oil.

  3. Add a handful of baby spinach leaves.

  4. Crack an egg over the top and cook until done
