Creamy Avocado Pasta Sauce with Fresh Basil
Ingredients
- 1/2 ripe avocado
- 2 tbsp lemon juice
- 2 tbsp fresh basil
- 1 tbsp olive oil
- 1 tbsp nutritional yeast
- 1 tsp minced garlic
- 8 oz cooked Palmini linguini
Preparation
Blend together all sauce ingredients (avocado, lemon juice, fresh basil, olive oil, nutritional yeast, and minced garlic) until the mixture is smooth and creamy.
Pour the avocado sauce over the cooked Palmini linguini.
Heat the linguini with the sauce in a pan over medium heat until warmed.
Top the dish with vegan parm or regular parm.
