Quick Mushroom Avocado Toast
Ingredients
- 2 tablespoons extra virgin olive oil
- 1 cup white mushrooms, sliced
- 2 slices whole grain bread
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes
- 1 ripe avocado
- 2 tablespoons fresh cilantro, chopped
Preparation
Toast the bread until golden and crispy
Heat olive oil in a skillet over medium heat
Add sliced mushrooms, black pepper, garlic powder, and red pepper flakes to the skillet; cook until mushrooms are soft and browned, about 5 minutes
While mushrooms cook, mash the avocado in a bowl
Spread the mashed avocado evenly on the toasted bread
Top with the cooked mushrooms and sprinkle with fresh cilantro
