Quick Mushroom Avocado Toast

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 cup white mushrooms, sliced
  • 2 slices whole grain bread
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes
  • 1 ripe avocado
  • 2 tablespoons fresh cilantro, chopped

Preparation

  1. Toast the bread until golden and crispy

  2. Heat olive oil in a skillet over medium heat

  3. Add sliced mushrooms, black pepper, garlic powder, and red pepper flakes to the skillet; cook until mushrooms are soft and browned, about 5 minutes

  4. While mushrooms cook, mash the avocado in a bowl

  5. Spread the mashed avocado evenly on the toasted bread

  6. Top with the cooked mushrooms and sprinkle with fresh cilantro
