Mushroom and Greens Breakfast Bowl with Seeds

Ingredients

  • 3 cups spinach
  • 1 teaspoon avocado oil (or water if oil-free)
  • 1 cup mushrooms of choice, sliced
  • 1/4 avocado, sliced
  • 1 tablespoon golden flax seeds
  • 1 tablespoon hemp seeds

Preparation

  1. Add spinach and a small amount of water to a saucepan over high heat, cover, and steam until wilted, then drain.

  2. Heat oil or water in a cast iron skillet over medium-high heat, add mushrooms, and cook without stirring for 3-4 minutes. Stir and repeat until each side is a nice deep golden color.

  3. Add the cooked spinach, mushrooms, seeds, and avocado to a bowl. Optionally, add a squeeze of lemon or hot sauce.

Notes

  1. Fun fact: We foraged these mushrooms in the woods, but always make sure to identify wild mushrooms properly or buy them from the store.
