Chia Seed Pudding with Butterfly Pea Powder
Ingredients
- 4 Tbsp white chia seeds
- 1/2 tsp butterfly pea powder
- 1/2 tsp almond extract
- 1 Tbsp maple syrup
- 1 1/4 C cashew milk
Preparation
Stir or shake the mixture to combine ingredients thoroughly.
Refrigerate for at least 10 minutes and shake to prevent settling; it can sit overnight for best results.
The pudding will develop a blue color after setting.
Optionally, squeeze half a lemon into the pudding just before adding blood orange to change the color to a shade of blue or purple, depending on the amount of lemon used.
