Chia Seed Pudding with Butterfly Pea Powder

Ingredients

  • 4 Tbsp white chia seeds
  • 1/2 tsp butterfly pea powder
  • 1/2 tsp almond extract
  • 1 Tbsp maple syrup
  • 1 1/4 C cashew milk

Preparation

  1. Stir or shake the mixture to combine ingredients thoroughly.

  2. Refrigerate for at least 10 minutes and shake to prevent settling; it can sit overnight for best results.

  3. The pudding will develop a blue color after setting.

  4. Optionally, squeeze half a lemon into the pudding just before adding blood orange to change the color to a shade of blue or purple, depending on the amount of lemon used.
