Chickpea and Beet Smash Sandwich
Ingredients
- 2 small beets
- 3/4 cup chickpeas
- 1/2 a small red onion
- Juice of 1-2 lemons
- Handful of fresh mint
- Salt & pepper to taste
- 4 slices of bread
- Avocado
- Tomato
- Lettuce or sprouts
- Balsamic glaze
Preparation
Smash the beets, chickpeas, onion, lemon juice, and mint in a large bowl, then season with salt and pepper.
Assemble the sandwich with the smash mixture, avocado, tomato, lettuce or sprouts, and balsamic glaze on the bread slices.
Tips
This smash can also be used in a nourish bowl instead of a sandwich.
