Vegan Chickpea Bacon Avocado Sandwich

Ingredients

  • 1/2 tin chickpeas
  • 3 rashers vegan bacon
  • 1 tbsp vegan mayo
  • White and black pepper
  • 1/2 avocado
  • 2 slices of your favourite bread

Preparation

  1. In a pan, fry the bacon for a few minutes until crispy.

  2. Drain the chickpeas and mash roughly with a fork.

  3. Cut up the bacon into small pieces and add to the bowl with the chickpeas.

  4. Spoon in the mayo and season with pepper. Stir to combine everything.

  5. Slice the avocado and layer everything between two slices of bread. You can even add some lettuce and tomato too.
