Creamy Spicy Tangy Pita Sandwiches

Ingredients

Oyster mushrooms

  • 400g oyster mushrooms
  • 1 tablespoon soy sauce

Chickpea spread

  • 400g chickpeas
  • 4 tablespoons mayonnaise
  • 8 tablespoons plant milk
  • 1 teaspoon dill
  • 1 pinch salt and pepper
  • 8 jalapeños
  • 1 teaspoon mustard
  • 0.5 red onion
  • 1 tablespoon sriracha or hot sauce

Assembly

  • 4 pitas
  • Lettuce
  • Tomato
  • Cucumber
  • Avocado
  • Herbs like cilantro or basil

Preparation

  1. Fry the oyster mushrooms in 1 tablespoon soy sauce until golden.

  2. Mix all the chickpea spread ingredients together to form a spread.

  3. Assemble the pitas by spreading the chickpea mixture inside, adding the fried oyster mushrooms, lettuce, tomato, cucumber, avocado, and herbs.
