Chipotle Chili Chickpeas
Ingredients
- 1 can of chickpeas, rinsed and drained
- 1 tsp chipotle pepper flakes
- 1/2 tsp garlic
- 1/2 tsp onion powder
- 1 poblano pepper, cut into strips
- 1 cup mushrooms, quartered
- 1/2 tsp cumin
- 1/4 tsp coriander
- 1/4 tsp turmeric
- 1 tbsp soy sauce
- 1/4 cup water ? .
Preparation
Add mushrooms to a pan and sauté until mushrooms have softened and slightly browned
Add chickpeas and all seasonings to the mix
Stir to combine and allow to cook until fragrant, 2-3 minutes
Add soy sauce and water and stir to combine
Bring to a simmer and allow liquid to cook off slowly, about 5-8 minutes
Adjust seasonings as desired
