Chipotle Chili Chickpeas

Ingredients

  • 1 can of chickpeas, rinsed and drained
  • 1 tsp chipotle pepper flakes
  • 1/2 tsp garlic
  • 1/2 tsp onion powder
  • 1 poblano pepper, cut into strips
  • 1 cup mushrooms, quartered
  • 1/2 tsp cumin
  • 1/4 tsp coriander
  • 1/4 tsp turmeric
  • 1 tbsp soy sauce
  • 1/4 cup water ? .

Preparation

  1. Add mushrooms to a pan and sauté until mushrooms have softened and slightly browned

  2. Add chickpeas and all seasonings to the mix

  3. Stir to combine and allow to cook until fragrant, 2-3 minutes

  4. Add soy sauce and water and stir to combine

  5. Bring to a simmer and allow liquid to cook off slowly, about 5-8 minutes

  6. Adjust seasonings as desired
