Crispy Baked Curried Chickpeas

Ingredients

  • 400g can chickpeas, drained and rinsed
  • 1 tsp curry powder

Preparation

  1. Preheat oven to 200C/180C fan/400F/gas 6 and line a baking tray with non-stick baking parchment.

  2. After draining and rinsing the chickpeas, pat them dry with a clean tea towel, then add them to a bowl.

  3. Sprinkle in the curry powder and stir until the curry powder has coated all of the chickpeas.

  4. Bake in the oven for 15 to 20 minutes, turning them over halfway through cooking time.

Serving suggestion

  1. Serve the crispy chickpeas in a bowl with rice and vegetables.
