Crispy Baked Curried Chickpeas

Ingredients

  • 400g can chickpeas, drained and rinsed
  • 1 tsp curry powder

Preparation

  1. Preheat oven to 200°C/180°C fan/400°F/gas mark 6 and line a baking tray with non-stick baking parchment.

  2. Pat the chickpeas dry with a clean tea towel, then add them to a bowl.

  3. Sprinkle in the curry powder and stir until the chickpeas are fully coated.

  4. Bake in the oven for 15 to 20 minutes, turning them over halfway through.

Serving

  1. Serve the crispy chickpeas in a bowl with rice and vegetables.
