Easy Vegan Banana Bread

Ingredients

  • 400g ripe bananas, peeled
  • 1 extra banana for decoration
  • 200g plain flour
  • 2 tsp baking powder
  • 100g light brown sugar
  • 4 tbsp desiccated coconut
  • 4 tbsp melted coconut oil
  • 2 tbsp oat milk
  • 3 tbsp cocoa powder

Preparation

  1. In a bowl, mash the bananas with a fork. Add flour, baking powder, light brown sugar, desiccated coconut, coconut oil, and oat milk. Stir to combine.

  2. In another bowl, add one-third of the banana bread batter together with cocoa powder. Stir to combine.

  3. In a lined baking tray, layer the two batters to create pretty swirls.

  4. Slice the last banana in half lengthwise and place it on top of the banana bread. Bake in the oven at 180°C for 45 minutes. Let cool or eat warm.

  1. The banana bread can be enjoyed warm or cooled for delicious results.
