Easy Vegan Falafel Pita Lunch
Ingredients
- 4-6 cooked falafels
- Oil for frying
- Pitta bread
- Baby gem lettuce
- Tomatoes
- Vegan mayonnaise
- Sweet chilli jam
Optional add-ons
- Sweet potato fries
Preparation
Flatten 4-6 falafels into a burger patty shape.
Lightly spray a pan with oil and fry the patty for 2 minutes on each side.
Toast the pitta bread.
Place the heated falafel patty inside the toasted pitta.
Add salad such as baby gem lettuce and sliced tomatoes.
Spread vegan mayonnaise and sweet chilli jam inside.
Slice the pita and enjoy.

Serve with a side of sweet potato fries for a perfect weekend lunch treat.
