Healthy Nourish Bowl with Chickpeas and Sauce

Ingredients

  • Mixed greens
  • Quinoa
  • Avocado
  • Black sesame seeds

Red pepper sauce

  • 1 whole red pepper (seeds removed)
  • 1/4 cup fresh cilantro
  • 2 tablespoons oil
  • Juice of 1/2 lemon
  • Dash of paprika
  • Salt
  • Pepper

Chickpeas

  • Chickpeas
  • Coconut oil
  • Smoked paprika
  • Oregano
  • Salt
  • Chili powder

Preparation

  1. Assemble the nourish bowl by adding mixed greens as the base.

  2. Add cooked quinoa and sliced avocado.

  3. Include the prepared roasted chickpeas and red pepper sauce.

  4. Top with black sesame seeds for garnish and serve immediately.

Red pepper sauce

  1. Remove seeds from 1 whole red pepper.

  2. Combine red pepper, 1/4 cup fresh cilantro, 2 tablespoons oil, juice of 1/2 lemon, dash of paprika, salt, and pepper in a blender.

  3. Blend until smooth.

Chickpeas

  1. Preheat oven to 425°F.

  2. Remove skins from chickpeas and toss in coconut oil.

  3. Roast for 15 minutes, then remove and mix with smoked paprika, oregano, salt, and chili powder.

  4. Bake for another 5-10 minutes until crispy.
