Healthy Vegan Norwegian Christmas Porridge
Ingredients
- 1 cup brown rice
- 1/2 cup white quinoa
- 2 cups water (+)
- 2 cups oatmilk
- 1 can coconut milk
- 1 tablespoon maple syrup
- 1/2 teaspoon salt
Preparation
Rinse the rice and quinoa in water.
Add them to a pot with salt and the measured water, and bring to a boil.
Add coconut milk and oat milk, and let simmer on low heat for 30-40 minutes, stirring every 5 minutes.
When done, add maple syrup, stir, and serve.
Tips
Serve with coconut sugar and cinnamon on top for added flavor.
