Healthy Vegan Norwegian Christmas Porridge

Ingredients

  • 1 cup brown rice
  • 1/2 cup white quinoa
  • 2 cups water (+)
  • 2 cups oatmilk
  • 1 can coconut milk
  • 1 tablespoon maple syrup
  • 1/2 teaspoon salt

Preparation

  1. Rinse the rice and quinoa in water.

  2. Add them to a pot with salt and the measured water, and bring to a boil.

  3. Add coconut milk and oat milk, and let simmer on low heat for 30-40 minutes, stirring every 5 minutes.

  4. When done, add maple syrup, stir, and serve.

Tips

  1. Serve with coconut sugar and cinnamon on top for added flavor.
