High Fiber Antioxidant Rich Salad
Ingredients
- 1/4 cup Balsamic Vinegar
- 1 cup cherry tomatoes
- 1 cup blueberries
- 2 peaches
- 1 avocado
- Himalayan salt and Crushed Black Pepper, to taste
- Bunch of basil leaves
- Lemon (optional)
Preparation
Use organic balsamic vinegar if possible.
Halve the cherry tomatoes.
Pit and slice the peaches.
Dice the avocado.
Combine all ingredients.
Optionally substitute spinach for basil leaves for added iron.
Add a squeeze of lemon juice for extra tartness if desired.
Enjoy the salad with the balsamic vinegar as dressing.
