Mushroom Zucchini Toast with Fried Sage
Ingredients
- 8 oz sliced baby Bella mushrooms
- 2 garlic cloves, sliced
- 1/2 small zucchini, thinly sliced
- 1 tbsp olive oil
- Ground pepper, to taste
- Sea salt, to taste
- 1/2 handful fresh sage
- Sliced bread
Optional additions
- 1/2 tsp liquid smoke
- Additional olive oil for frying sage, as needed
Preparation
If necessary, brush the mushrooms to remove dirt without washing them with water.
Sauté the sliced mushrooms, garlic, and zucchini in 1 tablespoon olive oil over medium heat for 10 minutes.
Optionally, add 1/2 teaspoon liquid smoke for a smoky flavor.
Season with ground pepper and sea salt to taste while cooking, and add more olive oil if needed.
In a separate small pan, heat olive oil over medium to high heat.
Once the oil is hot, add the fresh sage and fry for about 10 seconds until crispy but still green.
Remove the sage with kitchen tongs and drain excess oil on a kitchen towel.
Optionally, toast the sliced bread.
Serve the mushroom and zucchini mixture on top of the bread and garnish with the fried sage.
