No-Bake Date Energy Balls

Ingredients

  • 1 cup pitted dates
  • 2 cups rolled oats
  • 3/4 cup desiccated coconut
  • 1 tablespoon cacao powder
  • 1 tablespoon almond butter

Preparation

  1. Soak the dates in boiling water for 10-15 minutes.

  2. Once soft, remove from water and add to a food processor or blender, and set the liquid aside.

  3. Pour in the oats, coconut, cacao powder, and nut butter.

  4. Pulse until well combined.

  5. If the mixture is too solid, add a tablespoon of the date liquid until sticky but manageable.

  6. Prepare a small tray with wax paper.

  7. Scoop the mixture into your hands using an ice-cream scoop or tablespoon.

  8. Roll into balls and place on the wax paper.

  9. Refrigerate for 30 to 60 minutes and enjoy.
