No Bake Pecan Pie Bars

Ingredients

Crust

  • 1.5 cups oats
  • 1 cup almonds
  • 6 tbsp maple syrup
  • 2 tsp cinnamon
  • 1/2 tsp salt

Date caramel layer

  • 400g medjool dates (about 1+1/4 packed cups)
  • 1/4 cup water
  • 1 tsp vanilla
  • 1/4 tsp salt

Topping

  • 1 cup pecans

Preparation

  1. Pulse the crust ingredients until the almonds have broken into small pieces

  2. Pat down into an 8x8 pan with your hands

  3. Blend your date caramel layer in the same blender, scraping the sides as needed

  4. Spread on top of the crust with the back of a spoon

  5. Add your chopped pecans on top and press them down into the caramel layer with your hands so they don’t fall out

  6. Freeze for a minimum of 30 minutes and enjoy

Storage tips

  1. Store in the freezer and take out 10 minutes before you want to eat them
