No-Bake Reindeer Chocolate Brownies

Ingredients

  • 250g dates
  • 80g cashews
  • 40g pretzels
  • 140g cashew or almond butter
  • 1 tsp vanilla
  • 30g cacao powder
  • pinch of salt

Ganache

  • 60g cashew butter
  • 15g maple syrup
  • 10g cacao powder
  • 2 tbsp plant milk

Decorations

  • 9 pretzels
  • 15g chocolate
  • edible sugar eyes
  • reindeer noses

Preparation

  1. Soak 250g dates in boiling water and drain.

  2. Blitz 80g cashews and 40g pretzels together.

  3. Blend the drained dates with 140g cashew or almond butter and 1 tsp vanilla until sticky.

  4. Add the cashew-pretzel mixture, 30g cacao powder, and a pinch of salt, then blend to a sticky dough.

  5. Press the dough into a lined 8-inch dish to form a compact layer.

  6. Stir together 60g cashew butter, 15g maple syrup, 10g cacao powder, and 2 tbsp plant milk to make the ganache, then spread it over the brownie base.

  7. Melt 15g of chocolate.

  8. Drizzle the melted chocolate over 9 pretzels, top with edible sugar eyes and reindeer noses, and set in the fridge until firm.

  9. Place the reindeer faces on top of the brownies.

  10. Slice into 9 pieces and serve.
