Orange Glazed Soy Curls with Rice
Ingredients
- 1 cup soy curls
- 2 teaspoons poultry seasoning
- 1 teaspoon apple cider vinegar
- 1 tablespoon soy sauce or tamari
- 1 teaspoon onion powder
- 2 cups boiling water
- 1/4 cup white rice flour or all-purpose flour
- 1 tablespoon avocado oil
Sauce
- 1/2 cup light soy sauce
- 1/2 cup pure maple syrup
- 1/4 cup rice vinegar
- 2 teaspoons sesame oil
- 1 tablespoon minced ginger
- 2 garlic cloves minced
- 2 tablespoons tapioca starch or flour
- 1 cup cold water
- Zest and juice from 1 navel orange
Preparation
Rehydrate soy curls by mixing with poultry seasoning, apple cider vinegar, soy sauce, onion powder, and boiling water, then let sit while preparing other ingredients.
Mix sauce ingredients including light soy sauce, maple syrup, rice vinegar, sesame oil, minced ginger, minced garlic, tapioca starch, cold water, and orange zest and juice, then bring to a simmer until thickened and set aside.
Drain the soy curls and press to release excess liquid.
Sprinkle the soy curls with white rice flour or all-purpose flour.
Heat avocado oil in a frying pan and add soy curls, cook for 3 minutes, flip, cook for another 3 minutes, flip again and cook for 3 to 5 more minutes.
Pour half of the sauce over the soy curls, mix to coat, and cook until they are glazed.
Add more sauce if desired or save for later use.
Cook Loto rice according to package instructions.
Prepare broccoli by steaming or sautéing until tender.
Serve the glazed soy curls with rice and broccoli.
Tips
If the sauce thickens when refrigerated, thin it with water before using.
