Porridge with Roasted Strawberries and Sumac
Ingredients
- 300g ripe strawberries, hulled and cut in half
- 1 lemon
- 1 tbsp sumac
- 3 sprigs fresh mint
- 1 vanilla pod, split and seeds removed
- 1 cup rolled oats
- honey to serve
Preparation
Preheat oven to 220°C/fan 200°C
Toss the strawberries with the sumac, mint, vanilla and lemon. Transfer to an oven proof tray and roast for 20 minutes, tossing halfway through
Cook your porridge as per the packet instructions
Remove the mint sprigs and vanilla pod from the strawberries and serve on top of the porridge along with a drizzle of honey
