Pumpkin Spice Truffle Bars
Ingredients
- 1 cup pumpkin puree
- 1/2 cup water
- 1 tbsp pumpkin pie spice
- pinch of salt
- 3/4 cup coconut flour
- 1 cup dark chocolate chips
Preparation
Blend pumpkin, dates, water, spices, and salt until very smooth (add more water if necessary)
Transfer to a bowl and stir in coconut flour
Press into a rectangle on a sheet of wax paper, and freeze for 2 hours
Melt the chocolate chips
Add 1-2 tablespoons of coconut oil for a thinner smoother coating)
Remove dough from the freezer and cut into 12 bars
Coat each in melted chocolate and refrigerate until the chocolate is set
