Pumpkin Spice Truffle Bars

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup water
  • 1 tbsp pumpkin pie spice
  • pinch of salt
  • 3/4 cup coconut flour
  • 1 cup dark chocolate chips

Preparation

  1. Blend pumpkin, dates, water, spices, and salt until very smooth (add more water if necessary)

  2. Transfer to a bowl and stir in coconut flour

  3. Press into a rectangle on a sheet of wax paper, and freeze for 2 hours

  4. Melt the chocolate chips

  5. Add 1-2 tablespoons of coconut oil for a thinner smoother coating)

  6. Remove dough from the freezer and cut into 12 bars

  7. Coat each in melted chocolate and refrigerate until the chocolate is set
