Simple Curried Chickpeas Dish
Ingredients
- 1/2 red onion chopped
- 4 mushrooms, sliced
- 1 1/2 cups cooked chickpeas
- 2 tsp curry powder
- 1/4 tsp salt
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- 1/4 tsp ginger powder
- 1 tbsp tomato paste
- 1 cup water
- 2 tsp maple syrup (optional)
- Handful of fresh cilantro (optional)
Preparation
Add onions and mushrooms to pan over medium heat and cook until softened, about 2 minutes.
Add tomato paste, seasonings and chickpeas. Stir until fragrant, about 2 minutes.
Add water and stir to combine.
Bring to a simmer and cook until sauce thickens, about 10-15 minutes.
Turn heat off and add cilantro and stir until wilted.
Serve as desired.
