Simple Curried Chickpeas Dish

Ingredients

  • 1/2 red onion chopped
  • 4 mushrooms, sliced
  • 1 1/2 cups cooked chickpeas
  • 2 tsp curry powder
  • 1/4 tsp salt
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp ginger powder
  • 1 tbsp tomato paste
  • 1 cup water
  • 2 tsp maple syrup (optional)
  • Handful of fresh cilantro (optional)

Preparation

  1. Add onions and mushrooms to pan over medium heat and cook until softened, about 2 minutes.

  2. Add tomato paste, seasonings and chickpeas. Stir until fragrant, about 2 minutes.

  3. Add water and stir to combine.

  4. Bring to a simmer and cook until sauce thickens, about 10-15 minutes.

  5. Turn heat off and add cilantro and stir until wilted.

  6. Serve as desired.
